vinification and aging

The grapes used for this wine grow in vineyards in the Chianti DOCG growing area. Ripe grapes are harvested, destemmed and crushed. The entire winemaking process takes place in stainless steel tanks: after alcoholic fermentation at a controlled temperature, the wine undergoes malolactic fermentation.
