vinification and aging

After harvest, the clusters are immediately destemmed and crushed in order to minimize oxidative processes. Alcoholic fermentation begins at low temperatures in stainless steel tanks and lasts for about 15 days. When fermentation is complete, the wine is not subjected to further aging. In this way its primary aromas and freshness are maintained.
