Wine produced from the estate’s grapes according to The “Governo all’Uso Toscano” winemaking method, which consists of a second fermentation of the wine with the addition of must from overripe grapes.
This slow secondary fermentation leads to the release of noble polyphenols and increased alcoholic strength, extracts, glycerin and smoothness. We thus obtain a wine with a bouquet of ripe red fruits, robust and balanced on the palate.

The grapes are harvested and immediately fermented at a con-trolled temperature in the Ceppaiano winery following the traditional winemaking method. Aging takes place in wood for the duration of 12 months.
Deep ruby red in color, this wine reveals a complex bouquet, with multiple layers of primary aromas of rosehip, cherry, mint, cassis and licorice. Secondary aromas of resin, oak, leather and sweet roasted coffee. Intriguing on the palate with a mix of sweet aromas of white chocolate, vanilla and cedar on a buttery bed of oak verticalized by delicate acidity.
Great with pasta dishes and ideal with roasts, steaks and grilled veal.

A wine with a deep ruby red color with hints tending toward garnet. The nose has distinct balsamic notes, mint and eucalyptus, Mediterranean spices of bergamot, sage and rosemary. Creamy on the palate with moderate acidity, berries, blackberries, anise and orange peel.

The grapes used for this wine are typical Chianti grapes grown in the vineyards of the Ceppaiano Estate on mainly sandy soils that impart a distinct harmony.
