Its ideal pairings are grilled meats and aged cheeses.
The “Governo all’uso Toscano” method of winemaking was developed in the 19th century when wine accompanied meals on a daily basis. The contemporary interpretation of this technique consists of a second refermentation of the wine with the addition of overripe grape must.
This slow refermentation leads to the release of noble polyphenols and increased alcoholic strength, extracts, glycerin and smoothness. We thus obtain a wine with a bouquet of ripe red fruits, robust and balanced on the palate.
Ideal with red meats, game and aged cheeses.
